This is a recipe from my friend Kat! Wanted to share it with you all:

Spiced Nuts

“So Rachel’s post the other day about cinnamon sugar almonds inspired me to try out an old recipe of my mom’s but just tweak it a little bit, and it turned out so good I wanted to share with all of you! If any of you like those spiced nuts they have at baseball games or your family makes around the holidays, you’ll LOVE these, and also love the fact that eating them is just as good for you as eating plain almonds (/any other nut) and they don’t have the crazy amount of sugar that they normally do, thanks to using Truvia (or Stevia I think is the other no cal sweetener).. just made these today and they’re REALLY good and super easy.. you can add whatever spices you want, but this is what I just did:

Spiced Nuts

1 egg white
less than 1/4 cup Truvia
Cinnamon and Nutmeg to taste
3 Cups almonds (or pecans, etc.)

Combine the dry ingredients in a bowl. Froth the egg white in a separate bowl. Combine egg white and dry ingredients. Pour over almonds and mix/coat them well. Cover a cookie sheet with tin foil and spray it with a non-stick spray. Spread the nuts on the sheet evenly. Preheat oven to 275 degrees (convection oven). You’ll roast them for a total of approx. 30 mins - every 10 mins, take a spatula and mix them around. Remove from the oven and mix them again to separate. Let them cool - the spices come out more the cooler they get, and the egg white makes them more crunchy. Enjoy! “
